ANDERSON, Mabel A. (1896-1957) graduated from the University of Minnesota in 1919. She joined the Iowa State staff as manager of the Maple Tea Room in 1926 and continued there until 1928 when she became food service director at the Memorial Union where she remained until her death in 1957. She demanded excellence in food service and always required high standards in quality and cleanliness. During World War II (1942-1946), she had the responsibility of staffing and equipping the Friley Hall food service for navy personnel in addition to the food program for navy personnel and civilians at the Memorial Union. She deserves special recognition for her devotion to duty in this trying period of food and labor shortages.
